In the aroma you first get the bright and expressive character of the Chardonnay grape, supported by well integrated oak notes such as vanilla and spice. Alongside this is the wild ale character with a touch of funk.
On the palate the spirit shows warm spice and a soft buttery note that recalls a good white Burgundy. The flavour has something of a fine grappa, expressive and fruity, while still carrying the some elements of our wild ales. A hint of fermentation and gentle wood depth come through with balance.
