Wild ale made with organic red wine grapes (Sangiovese variety) from Emilia-Romagna, Italy.

A blend of wild ales aged for 2–3 years in oak barrels was macerated on the grapes for a year, using approximately 550 grams per litre.

The result is a rosé wild ale where the vibrant fruit character meets the depth and complexity of our barrel-aged beers.

The aroma opens with ripe strawberry, red berries and dry oak, followed by hay, apple skin and a delicate floral note reminiscent of violets. A subtle hint of fermented tobacco adds depth and complexity.

On the palate, ripe red fruit and aromatic grapefruit peel meet the fullness and structure of a skin-contact natural Italian wine. Fine tannins provide a gentle grip, while a persistent mousse gives the beer an almost sparkling-wine character.

The finish is dry and subtly spicy, with hints of bay leaf and thyme, followed by a elegant touch of oak.

Sangiovese is very suitable for bottle ageing, especially for 1–5 years. Store upright or lying down in a cool, dark place and serve at 11–13°C. The wine character is prominent now, while further ageing will integrate and evolve the fruit, oak and character of the beer.
