Wild ale dry-hopped with organic Nelson Sauvin hops.

A blend of a rustic saison and wild ales aged for 3–5 years in oak barrels, bringing together the white grape and melon character of Nelson Sauvin with the depth and complexity of our barrel-aged beers.

Released from our cellar after two and a half years aging in bottle, now showing beautifully evolved hop aroma's, oak and wild character.

Aromas of white grape, ripe stone fruit, apricot cake and subtle muscat, layered with creamy oak and a delicate hint of sweet elderflower. On the palate, gentle bitterness, rounded acidity and fine tannins frame the distinctive vinous character of the Nelson Sauvin hops. After two and a half years in bottle, the beer has softened, allowing the hop, oak and acidity to come together beautifully.

Store upright or lying down in a cool, dark place. Serve at 11–13°C. Suitable for further bottle ageing, allowing the flavours to continue evolving.
