Since the beginning of Tommie Sjef, roughly every year we’ve released a magnum bottle (1.5 litre) filled with something special. For me personally, I love to work with only the beer, without fruit, and enjoying the varieties in taste from barrel to barrel. Discovering all those different characteristics and trying to make the perfect blend with only that which is available momentarily is the most exciting. Purchase of this year’s magnum will give you access to the membership program.

The perks of this membership are as follows:

  • Receive access to (at least) two limited quantity, members-only releases in the coming year.

Important note: from now on we’ve loosened the purchase limit to 12 bottles per customer, regardless of membership status. Combining of orders will no longer be offered. However, we believe the one week pre-sale will give members time to organise their 12-bottle-box as efficiently as they find necessary, although we cannot guarantee that the release will not sell out during the members-only pre-sale.

This year’s magnum is filled with a great blend of wild ales, aged for 1, 2 and 4,5 years in oak barrels. In the nose you will find almost creamy Chardonnay notes and some minerality together with slightly sweaty notes (in a good way). The taste is quite balanced. Salted lemons, dry apple skin, herbs like laurel and thyme, a hint of oak and hoppy notes which give off a sweetness of sorts. The beer is perfectly drinkable because of the pronounced bitterness and dry tannins and interesting structure of the blend: it lacks a bit of backbone which actually helps to create a kind of open space in a good way.

Nothing in the world is as soft and yielding as water. Yet for dissolving the hard and inflexible, nothing can surpass it.

The soft overcomes the hard; the gentle overcomes the rigid. Everyone knows that is true, but few can put it into practice.

Therefore the Master remains serene in the midst of sorrow. Evil cannot enter his heart. Because he has given up helping, he is people’s greatest help.

“als water” is perfectly suitable for extensive ageing. I recommend to age the magnum for at least 6 months up to several years. Ageing will round the bitterness, balance out and open up the beer.
Store our beers upright or lying down in a cool, dark place. Our beers are best enjoyed between 12 and 14 degrees Celsius.
