Since the beginning of Tommie Sjef, roughly every year we’ve released a magnum bottle (1.5 liter) filled with something special. For me personally, I love to work with only the beer, without fruit, and enjoying the varieties in taste from barrel to barrel. Discovering all those different characteristics and trying to make the perfect blend with only that which is available momentarily is the most exciting. Memberships will last for one year, starting on the general release date of the next beer that is sold in the Tommie Sjef webshop. We are aiming to release at minimum 8 releases this year, if we do not reach this, we will extend the membership.

Zes is a special blend of wild ales aged for 1 up to 6 (!) years in oak barrels. It’s an hommage to a well made geuze.

In the aroma I find Chamomile, marigold, roses, the skin of apricots, sea breeze and a very light oaky aroma and a slightly hint of earth, grass and white pepper from the hops.

Muscat grapes and peaches are the main flavor together with a balanced bitterness and gentle acidity. There is a certain minerality and an earthy note from the hops that works very well in the blend. The aftertaste is dry oak and lemon peel with a hint of the floral aspect which is present in the aroma.

‘Zes’ is perfectly suitable for extensive ageing. I recommend to age the magnum for at least 6 months up to several years. Ageing will round the bitterness, balance out and open up the beer.
Store our beers upright or lying down in a cool, dark place. Our beers are best enjoyed between 12 and 14 degrees Celsius.
